3 egg yolks, room temperature 2 tablespoons lemon juice 1 stick butter ¼ teaspoon salt dash cayenne pepper
Preparation
Combine yolks, lemon juice, salt and cayenne in blender. Melt butter until bubbly; don’t brown. Turn blender on high speed and immediately pour butter in a slow, steady stream, turn off blender and transfer to a bowl to keep warm.
